1/ CHOCOLATE MUG CAKE

This recipe might come off as one of those gimmicky recipes that say that they only need 1 minute but actually end up taking an hour. It might be hard to believe but this cake actually does take only a minute to make. Don’t believe me? Try it out for yourself.
It is the perfect midnight snack as it is so simple and quick to make.

Serves: 1

Ingredients:

  • 3 Tablespoons Spelt Flour
  • 3 Tablespoons Cocoa Powder
  • 3 Tablespoons Almond Milk
  • 3 Tablespoons Oil
  • 1 Tablespoons Sugar
  • 1/2 Teaspoon Vanilla Extract
  • A Pinch of Salt

Procedure:

  1. Combine together all the dry ingredients in a large coffee mug.
  2. Add in the wet ingredients and mix well.
  3. Remove the spoon and microwave for a minute.
  4. Remove from the oven, allow to cool a little and then eat straight from the mug.
  5. Have fun!

2/ OATMEAL AND CHOCOLATE PIE

Oatmeal is a common breakfast across the world. It is very customizable and usually has a bland taste. That is what makes it so versatile as well as this recipe proves. Like in this pie, it is used as a base.
This makes this recipe high in fiber, great for health and absolutely delicious.

Serves: 8

Ingredients:

  • 3/4 Cup Steel Cut Oats
  • 3/4 Cup Pancake Syrup
  • 1/2 Cup Almond Milk
  • 1/2 Cup Coconut Oil
  • 1/2 Cup Chocolate Chips
  • 1/2 Cup Chopped Walnuts
  • 2 Flax Eggs

Procedure:

  1. Mix along all the ingredients in an exceedingly massive bowl.
  2. Line a pie shell with parchment paper and pour the batter into it.
  3. Bake for 1 hour at 35o degrees.
  4. Cool and slice.
  5. Enjoy!

3/ PUMPKIN CHOCOLATE LOAF

If one of these is lying around in the fridge, it is so hard to resist. Often, I will bake this loaf and store the leftover in the refrigerator. Then whenever I open the fridge, I am tempted to gobble it all down simply because it is so good!

Serves: 5-6

Ingredients:

  • 1 1/2 Cups Flour
  • 1 Cup Diced Pumpkin
  • 1 Cup Brown Sugar
  • 1/2 Cup Coconut Milk
  • 4 Tablespoons Cocoa Powder
  • 2 Tablespoons Coconut Oil
  • 1 Tablespoon Molasses
  • 1 Teaspoons Instant Coffee
  • 1 Teaspoon Baking Powder
  • 3/4 Teaspoon Ground Cinnamon
  • 1/2 Teaspoon Baking Powder
  • 1/2 Teaspoon Salt
  • 1 Large Apple

Procedure:

  1. Peel, core and dice the apple.
  2. Add the cubed apples, pumpkin and coconut milk in a food processor. Blend until smooth puree forms.
  3. Add in the coconut oil and blend once again.
  4. In a large bowl, sift together all the dry ingredients.
  5. Make a well in the middle of the dry ingredients and pour in the wet ingredients.
  6. Mix well to make a smooth batter.
  7. Pour into a bread loaf and bake for 20 minutes at 400 degrees.
  8. Then lower the temperature to 35o degrees and bake for 3o minutes.
  9. Cool on a wire rack before slicing.
  10. Enjoy!
