HANDY SNACKS

1/ CHOCOLATE COATED RAISINS

These make for great on-the-go treats. You can just pick a handful and pop them into your mouth. The raisins are naturally sweet so that eliminates the need for any additional sweetener.

Serves: 4-5

Ingredients:

  • 1 1/2 Cups Raisins
  • 1/4 Cup Vegan Chocolate Chips
  • 1/2 Tablespoon Coconut Oil

Procedure:

  1. Melt the chocolate chips over a double boiler.
  2. Add in the coconut oil and mix until both are homogenous.
  3. Remove from heat and add in the raisins.
  4. Mix well so that each one is coated.
  5. Spread on a baking tray lined with parchment paper and allow to air dry.
  6. When dry, the coating will be crisp.
  7. Store in an airtight jar and enjoy!

2/ SUPER BALLS

This is the most nutritious type of dessert that you can imagine. It is primarily made out of healthy nuts and seeds. The best part is that it is a lavish treat.

Serves: 10

Ingredients:

  • 1 1/2 Cups Pitted Dates
  • 1/2 Cup Shredded Coconut
  • 1/2 Cup Cocoa Powder
  • 1/4 Cup Ground Flaxseeds
  • 1/4 Cup Chia Seeds
  • 1/4 Cup Sunflower Seeds
  • 1/4 Cup Cocoa Nibs
  • 2 Tablespoons Coconut Oil
  • 1/2 Tablespoon Warm Water

Procedure:

  1. Add the dates and warm water to a food processor and process until smooth paste forms. Add more water if needed.
  2. Now add in all the other ingredients to make a dough.
  3. Use this mixture to form small round balls. Coat them in cocoa powder and lay on a baking tray.
  4. Transfer this tray to a freezer and freeze overnight.
  5. Add to an airtight jar and keep in the refrigerator.
  6. Enjoy!

3/ CHOCOLATE FUDGE POPS

Fudge pops that can be frozen and popped (pun totally intended) out of the freezer at any time.

Serves: 12

Ingredients:

  • 1 1/2 Cups Soy Yogurt
  • 1 1/2 Cups Chocolate Chips
  • 1 Cup Almond Milk
  • 2 Teaspoons Vanilla Extract

Procedure:

  1. Melt the chocolate chips over a double boiler.
  2. Add in the milk and stir to form chocolate milk.
  3. Pour the mixture into a panand convey to a boil. Then reduce the heat and simmer for 5 minutes.
  4. In a bowl, combine together yogurt and vanilla extract.
  5. Remove the mixture from heat and allow to cool.
  6. Mix in with the yogurt.
  7. Take a muslin cloth and strain the liquid.
  8. Take the liquid and pour into popsicle moulds.
  9. Put in the freezer until frozen solid.
  10. Enjoy!
